Khichari (Ayurvedic Comfort Food from Rice & Mung Beans)
Serving Size: 3/4 cup cooked Khichari | Servings per container 4
Stove Top Directions: In medium sauce pan, bring 2 3/4 cups of water to a boil. Add entire package of Khichari mix, stir, and cover tight. Reduce heat and simmer for 25 minutes until water is fully absorbed and rice is soft. Remove from heat, let stand for 5 minutes and fluff with fork before serving.
Rice Cooker Directions: Cooking times may vary depending on your style of rice cooker. Combine 2 1/2 cups of water and entire package of khichari mix into the cooking pot. Stir, cover, and cook on brown rice setting (if option on your cooker) or regular rice setting until it switches to warm. Let sit for 5 minutes, fluff with fork, and serve
Garnish with cilantro/lime juice/ghee/coconut/roasted nuts
